Sunday Baking: Lily Pebbles' Brookies

So I had my girlfriends over for a long overdue catch up last night. My other half is away so we ordered pizza, watched Fifty Shades - terrible, FYI - and chowed down on some freshly baked cookies. I'd been bored in the afternoon and thought what better way to waste an hour or so than getting my bake on? I'd bookmarked Lily Pebbles' Brookies recipe months ago and thought it the perfect recipe for a girls night in.

I won't go through the recipe, instead follow it here... I followed it exact, although halved the quantities as I didn't need the full batch, and they turned out pretty damn perfect! I like that there's no milk used or butter and only cocoa powder to make it yummy and chocolatey. They're so light and perfectly squidgy in the middle - scrummy! My friends loved them and even took some home. I'll be having one as an afternoon treat with a cup of tea later on and will probably take the rest into work.
